Lemon Rice With Potato Poriyal

 

A Simple, Easy, Quick Lunch Menu.. A healthy easy rice recipe with side dish.  During vegetarian days we will be confused in making a good dish at the same time healthy and delicious. There are more working mums these days. Therefore, I try to make a simple, quick meal that consumes very less time compared to other meal preparing times. 

So for a friday lunch, Not having the time to do much curries or poriyals, Gravy. I decided to go simple with a Simple Lemon Rice and the Side dish is Potato Fry or Potato Poriyal.

This took very less time for me. The things i needed to prepare before making this was. Cook rice . Clean cut the potatoes and cut it in pieces you desire. I cut it in to very small pieces as it will quickly get cooked and easily to get it roasted without taking much time in the kitchen.

Here is the ingredients i used to make the Lemon Rice

1 Tbsp Oil 1 Tbsp Ghee 1/2 Tsp Mustard seeds 1 Tsp Chickpea dal 1 Tsp Urad dal 3 Tbsp Peanuts Few curry leaves 2 Dry Red chilly 1 Tbsp Chopped Cashew Nuts 1 Tsp Chopped Ginger 1/2 Tsp Asafeotida 1/2 Tsp Tumeric 1/2 Tsp Salt 3 Tbsp Lemon Juice 1 Cup Cooked Rice


The Easy Step to make the Lemon rice

Add 1 Tbsp Oil


Add 1 Tbsp Ghee


Add 1/2 Tsp Mustard Seeds


Add 1 Tsp Kadala Paruppu / Chick pea dal


Add 1 Tsp Urad Dal


3 Tbsp Peanuts


Few Curry Leaves



                                            2 Dry Red Chillies

Stir for 2 Minutes in Medium Flame


1 Tbsp Chopped Cashew Nuts ( Optional)


1/2 Tsp Asafetida


1/2 Tsp Turmeric


1/2 Tsp Salt


Stir well


3 Tbsp lemon Juice


Mix well. Keep Flame Low


Add 1 Cup of Cooked Rice


Mix



Delicious Lemon Rice is Ready



Now, Lets prepare Potato Fry




Add 3 Tbsp Oil


1/2 Tsp Mustard Seeds


1/2 Tsp Cumin Seeds / Jeeragam



Few Curry Leaves

                    

Add 2 Big Potatoes Cut in Small pieces


Add 1/4 Tsp Turmeric



1/2 Tsp Sambar Powder


1/2 Tsp Chilly Powder ( You can add more according to your taste)



Add 1/2 Tsp Salt


Stir well


Let it cook about 10 - 15 minutes. in Low flame.


Poriyal is Ready

Thakkali Sadam - How to make Tomato Rice


Thakkali Sadam or Tomato rice is very easy to make and delicious tooHere are the instructions on how to make this simple, filling and satisfying meal using tomatoesas the main ingredient.

You can make this Thakkali Sadam in Pressure Cooker. Thakkali Sadam is also a variety rice recipe. This thakkali sadam can be prepared easily and instantly without any difficulty. Most important about this thakkali sadam, tomato rice, is that the tomatoes needs to be ripe tomatoes. You can make this thakkali sadam with any type of rice. The coconut milk added to the rice recipe, bring in more flavour, aroma, and great texture to the tomato rice.

I hope you would find this video useful. This Variety rice/ Thakkali Sadam is a perfect one pot meal, for quick lunch, and as an Instant rice.


Ingredients

Bay leaves - 2 Cardamom - 2 Cloves - 3 Cinnamon stick - 1 Star Anise - 2 Tomatoes - 5 Onion - 1 Whole Big onion Ginger Garlic Paste - 1 Tsp ( You can add 2 Tsp too) Turmeric powder - 1/2 Tsp Salt - 2 Tsp Red chilly powder - 1 Tsp Rice - 2 Cup Water - 2 Cup Coconut Milk - 2 Cup Pressure cook for 2 whistles

Step by Step Photos


1 Tbsp oil


2 Tbsp Ghee


2 Bayleaves


1 Cinnamon Stick
3 Cloves
2 Cardamom
2 Star Anise


1 Medium Size Onion Finely Sliced


Keep the flame in medium and Saute it for a minute


Add 2 Tsp Ginger Garlic Paste and Stir for a minute


Add 3 Tomatoes. Try to add the ripe, red tomatoes as it gives great colour to the tomato rice and more taste


Keep the flame in low and let the tomatoes cook well


While tomatoes are getting cooked start adding the spices
1 1/2 Tsp Salt


1/2 Tsp Turmeric



1 Tsp Red Chilly Powder



Keep the flame low
Let the tomatoes get mushy and mix well


Now, Add 2 Cup washed rice
I used Ponni Rice and did not require any soaking time
If you wish to replace it with Basmati rice
Soak it for 20 minutes


Mix well


Now Add 2 Cups of Coconut Milk
The coconut milk gives a nice texture and gives a taste of biriyani 
2 Cup of Rice = 2 Cup Coconut Milk + 2 Cups of Water


Add the 2 Cup of water


Mix well


Add salt if needed. I added 1/2 Tsp salt




I have added few Mint and Corriander leaves
If you have any of the above add 


Lets cook it for 2 Whistles in Pressure cooker
In medium flame
You can use rice cooker too

After 2 whistles, Rice perfectly cooked
Smells great. A different way of making tomato rice


Thakkali Sadam/ Tomato Rice is ready
