Today i am going to share with you, How to make Sri Lanka's Traditional Watalappam, Its the Original Wattalapan / Vattalapam Recipe. This is a Jaggery Wattalapam / Vattalapam. Now a days there are many versions of this recipe. Replacing Jaggery with Dark Brown Sugar / Brown Sugar. However, The orginal vattalappam recipe is made with Jaggery. This is a special dessert prepared during Muslim Festivals. Its a Muslim Eid Special Dessert. Watalappan cane be cooked in oven, Wattalappan cooked in rice cooker, However I will show you Step by step on How to make the Traditional, Original, Wattalapan Recipe.
Try this Authentic Wattalapam with easy steps shown below
Ingredients
Jaggery - 250g
Thick Coconut Milk - 300ml
White Sugar - 1/4 Cup
Eggs - 5
Cardamom Powder - 1/2 Tsp or 3 Cardamom Pods Crushed
6 Inch Pan to Steam
Aluminium Foil to cover the pan before baking
Vanilla Essence - 1 Tsp
Steam 45 - 50 Minutes Medium Flame
I have taken 250g of Jagger ( Kithul Jaggery) Go for the Dark brown Jaggery
rather than the light ones. Chop it in Small pieces
Transfer it to a Pan to melt the jaggery
Place the pan in the stove. Keep Flame low
Add 3 Tbsp of water and let the jaggery melt
Jaggery melted
If you cut the jaggery or grate it in small pieces
the melting of jaggery syrup becomes more easy
Once the Jaggery syrup is ready
Strain it to another bowl
Add 1/4 Cup of Sugar
Beat with a fork or whisker for about 1 minute
Add 300ml thick coconut milk
You can buy thick coconut milk in store
or blend of half grated coconut and strain the coconut milk
Whisk it well for about 2 minutes
Keep it aside
Now add 5 Eggs
Add 1 Tsp of Vanilla Essence
This is to remove the Raw egg smell
Whisk it
After whisking it well
Strain it to the Jaggery syrup
Strain it well
Now Stir / Whisk
Finally Add 1/2 Tsp Cardamom Powder
Or Crush 3 Cardamom pods and add it to the mixture
Mix all
I have taken 6 inch Pan
Grease it well with butter
Now add the mixture to it
and cover it with Alminium Foil
To steam. I have used Idli Steamer
Added some water
place a stand inside
You can also steam it in Rice cooker
Place the Covered Pan inside the idli steamer
Place a small plate on top of the covered pan tray
This is to collect the steam water on the plate
if not the steam water will fall on the alminium foil
Now close with the Lid
Steam it for 45 minutes
in medium flame
Taking it out after 45 minutes
Looks great. Perfectly cooked
You can check if its cooked with the help of a tooth pick
the tooth pick should come out clean
Decorate with Cashew nuts
Leave it to completely cool for about 2 to 3 hours
Delicious Wattalapam is ready !

250ml hot water for each jelly packets
6 tsp of Gelatin powder
100ml of water
390g of Condense Milk
400ml of water
