kadala Paruppu Sundal l Sundal Recipe l Healthy Snacks



Evening times , the most difficult time for me to decide what snacks to make for my kids. There are days i offer them some biscuits or chips But, Then feeling guilty of not giving them nutritious and healthy snacks. So, when i was trying to figure out a snack that can be made quickly also at the same time its healthy. 
  So, I started doing sundal recipes for my kids. One day Peanut Sundal, Another day Pasi Paruppu sundal , Black eye bean ( Lobia) Sundal and So on.. 
To make my time more easier and to do things quicker. I soak and pressure cook them and keep in during morning or during lunch time . Therefore, its easy for me to make it quickly . As the making taking less than 5 minutes.  Only the soaking part and cook part takes a little bit of time. Which you can do according to your plan. 




Kadala parupu - 1 Cup Oil - 1 Tbsp Mustard Seeds - 1/2 Tsp Urad dal - 1 Tsp Green chilly - 1 Grated ginger - 1 Tsp Few curry leaves Pinch of Asafeotida 4 Tbsp grated coconut Salt




Lets see How to make this healthy sundal




I have taken 1 Cup of Kadala Paruppu Sundal

Wash the Kadala Paruppu / Channa dal for 2 times

After Rinsing, Add water and let it soak for about 2 hours

After 2 hours, Drain the water and Add the Soaked Kadala Paruppu 
to the pressure cooker


Pour 2 Cups of water for the Paruppu to get cooked

Let it Pressure cook for 2 whistles 


Paruppu is perfectly cooked
Strain the paruppu and keep it aside

Take a pan, Add 1 Tbsp of Oil . Keep flame in Low

Once the oil is hot, Add 1/2 Tsp of Mustard Seeds 
and 1 Tsp Ulundu

Add few curry leaves

1 Tsp of Grated Ginger
Pinch of Asafeotida



Saute it well. Keep the Flame low
Now, Add the drained and Cooked Kadala Paruppu
Stir well

Add Salt as per your taste. I have added 1/2 Tsp Salt

And Also , 4 Tbsp or 1/4 Cup of grated coconut

Thats all, Simple Kadala Paruppu Sundal recipe.
Stir well for a minute

Our Kadala Paruppu Sundal is ready !

Milk Powder Burfi

 

I love Bombay Sweets. In Sri Lanka we have alot of Indian Shops that sells South Indian and North Indian Sweets. As i had been always Buying sweets, I decided to try a Burfi . A simple step by step Burfi recipe to start with, So i found a easy way out to make a Burfi with Milk powder rather than Goya. Goya has bit of a longer process , As i wanted to start with an instant one . I tried with the Milk Powder. I was really surprised with the results, It actually came really good. My kids loved it . I did a small batch to try it first without wasting the ingredients. To my astonishment, the plate finished in no time. I was happy with the results, the feed back from my family. So i made a video of How i make this Milk Powder Burfi. Any beginners can try this step and it will not go wrong.

All you need is Patience. While keeping the flame really low.

Ingredients For Milk Powder Burfi

Milk Powder - 2 1/2 Cups Milk - 1 Cup Sugar - 3/4 Cup Ghee - 1/4 Cup Cardamom Powder - 1/4 Tsp or 2 Crushed Cardamom Nuts - Few Almonds, Cashew nuts, Pistachios ( Finely Chopped)





Step by Step Pictures


Add 2 1/2 Cups of Milk Powder
I have used Full Cream Milk Powder. Do not use Low fat or Non Fat


In the same Cup. Measure 3/4 Cup of Sugar 
and add it to the same bowl


Now add 1 Cup of Milk
Again its Fresh Full cream Milk
Do not use Non Fat or Low Fat


Stir it will 


This is how the batter will be without no lumps


Now transfer it to a cooking pan


Add 1/4 Cup of Ghee 
Keep the flame low



Start stirring. Keep flame low through out the process
As it has high chances of getting burnt
Stir for about 5 minutes


The mixture has started thickening
At this stage add cardamom. Crushed Cardamom or Powder
as I didn't now have the powder I crushed 2 cardamoms



Keep stirring till the mixture get really thick


It amost done


You will see the mixture starts removing from the pan.
At this stage its 100% done
you can add a tablespoon of ghee around for it to 
come out easily


Take a tray, Line it with a greased baking paper


Place it on the tray


Level it up


Add Crushed or Finely chopped Nuts
I took Few Almonds, Pistachios, Cashew Nuts
Finely chopped it and Sprinkle it on the top


Let it stay for about 3 hours 
Or you can keep it in the fridge for 1 to 2 hours
I kept it Outside for 1 Hour
and in fridge for 1 hour

Sri Lankan Wattalapam

Today i am going to share with you, How to make Sri Lanka's Traditional Watalappam, Its the Original Wattalapan / Vattalapam Recipe. This is a Jaggery Wattalapam / Vattalapam. Now a days there are many versions of this recipe. Replacing Jaggery with Dark Brown Sugar / Brown Sugar. However, The orginal vattalappam recipe is made with Jaggery. This is a special dessert prepared during Muslim Festivals. Its a Muslim Eid Special Dessert. Watalappan cane be cooked in oven, Wattalappan cooked in rice cooker, However I will show you Step by step on How to make the Traditional, Original, Wattalapan Recipe.

Ingredients

Jaggery - 250g Thick Coconut Milk - 300ml White Sugar - 1/4 Cup Eggs - 5 Cardamom Powder - 1/2 Tsp or 3 Cardamom Pods Crushed 6 Inch Pan to Steam Aluminium Foil to cover the pan before baking Vanilla Essence - 1 Tsp Steam 45 - 50 Minutes Medium Flame






I have taken  250g of Jagger ( Kithul Jaggery) Go for the Dark brown Jaggery 
rather than the light ones. Chop it in Small pieces


Transfer it to a Pan to melt the jaggery


Place the pan in the stove. Keep Flame low
Add 3 Tbsp of water and let the jaggery melt



Jaggery melted
If you cut the jaggery or grate it in small pieces 
the melting of jaggery syrup becomes more easy


Once the Jaggery syrup is ready
Strain it to another bowl


Add 1/4 Cup of Sugar


Beat with a fork or whisker for about 1 minute


Add 300ml thick coconut milk
You can buy thick coconut milk in store
or blend of half grated coconut and strain the coconut milk


Whisk it well for about 2 minutes
Keep it aside


Now add 5 Eggs



Add 1 Tsp of Vanilla Essence
This is to remove the Raw egg smell


Whisk it 


After whisking it well
Strain it to the Jaggery syrup 


Strain it well


Now Stir / Whisk 


Finally Add 1/2 Tsp Cardamom Powder
Or Crush 3 Cardamom pods and add it to the mixture


Mix all


I have taken 6 inch Pan
Grease it well with butter


Now add the mixture to it
and cover it with Alminium Foil



To steam. I have used Idli Steamer
Added some water
place a stand inside
You can also steam it in Rice cooker


Place the Covered Pan inside the idli steamer



Place a small plate on top of the covered pan tray
This is to collect the steam water on the plate
if not the steam water will fall on the alminium foil


Now close with the Lid
Steam it for 45 minutes
in medium flame


Taking it out after 45 minutes


Looks great. Perfectly cooked
You can check if its cooked with the help of a tooth pick
the tooth pick should come out clean


Decorate with Cashew nuts
Leave it to completely cool for about 2 to 3 hours


Delicious Wattalapam is ready !
